Sikhye (Sweet Rice Punch)
Soak malt powder in water, strain clear liquid, add 1 cup cooked rice, and keep at 55-60°C (rice cooker warm mode) for 4-6 hours. When rice grains float, remove them, add sugar, boil briefly, and chill.
Sikhye is a traditional Korean sweet rice beverage made by saccharifying cooked rice in malt water at 50-60°C for 4-6 hours. The amylase enzymes convert starch to sugar — rice grains floating to the surface signal completion.
핵심 요소
핵심 원리
Amylase from malt extract (optimal temperature 50-60°C) + prolonged saccharification → naturally sweetened fermented beverage.
핵심 단계
- 1Soak 100g of malt extract in 1.5 liters of water for 1 hour. Then, strain the mixture through a sieve to prepare a clear liquid.
- 2Combine 1 cup of cooked rice with enough malt water to cover it, and maintain a temperature of 55-60°C (use the "keep warm" mode on a Jeon rice cooker).
- 3If more than one-third of the rice grains float to the surface after 4-6 hours, it indicates success.
- 4Rinse the rice grains in cold water and store them in the refrigerator. For the sikhye (Korean sweet rice drink), add 4 tablespoons of sugar to the liquid and boil for 5 minutes, then let it cool.
malt
The freshness of rice paste is important – it's recommended to store it in the freezer.
serving
Served chilled with rice grains and pine nuts – also aids digestion.
temperature
Below 50°C: No gelatinization occurs. Above 60°C: Enzymes become inactive. The optimal temperature is 55°C.
