돌솥밥 원리
Stone Pot Rice
Coat the cold stone pot with sesame oil, heat over medium, add rice and heat on high 2-3 minutes until the bottom sizzles. Add toppings and gochujang, mix vigorously, then add water to the pot for nurungji-tea (scorched rice tea).
Dolsot-bibimbap is cooked in a pre-seasoned stone pot that retains intense heat. The defining feature is the crispy rice crust (nurungji) formed at the bottom — achieved by oiling the pot and allowing the rice to sizzle.
핵심 요소
핵심 원리
The stone pot's heat retention and oil coating create a golden crispy rice layer at the bottom, while also maintaining the ideal temperature for Bibimbap.
핵심 단계
- 1Apply a thin layer of sesame oil or vegetable oil to the inside of the stone pot.
- 2Heat the dolsot (stone pot) over medium heat, then add the rice. Next, increase the heat to high and cook for 2-3 minutes, listening for a sizzling sound.
- 3Stir-fry the vegetables and fried egg with gochujang, maintaining a high heat for 1 minute. Then, turn off the heat and mix everything together.
- 4After stirring, add 100ml of water, cover, and scrape off the crispy rice sediment from the bottom. This will create "sungnyung," a traditional Korean drink.
