장아찌 원리
Jangajji (Brine-preserved Vegetables)
Salt vegetables to remove moisture, submerge in boiled soy brine, store at room temperature 1-2 days, then refrigerate. Re-boil the brine every 2-3 days and pour back — repeat 2-3 times for depth.
Jangajji is a traditional Korean preserved side dish — vegetables cured long-term in soy, doenjang, gochujang, or vinegar brine. Osmosis draws moisture out and lets the curing liquid penetrate.
핵심 요소
핵심 원리
Osmotic dehydration + Repeated boiling (sterilization and flavor concentration) → Creates a deep, rich pickled flavor with extended shelf life.
핵심 단계
- 1Vegetable salting: 30 minutes to 1 hour (remove at least 30% of the moisture).
- 2Combine 1 cup of soy sauce, 0.5 cups of vinegar, 0.5 cups of sugar, and 1 cup of water in a saucepan. Bring to a boil, then remove from heat and let cool.
- 3Place the vegetables in sterilized glass jars and pour the cooled sauce over them.
- 4Repeat the following process three times, every 2-3 days: remove the sauce, heat it up, let it cool down, and then pour it back over the ingredients.
storage
Make sure the soy sauce completely covers all surfaces – areas exposed to air are prone to mold growth.
re_boiling
Repeated boiling achieves three benefits: it eliminates bacteria, concentrates the sauce, and improves its shelf life.
vegetables
Garlic, perilla leaves, cucumber, Korean radish, garlic sprouts, and onion – each requires a different pickling time.
