Spicy Green Chili Peppers Stir-fried with Anchovies.

- 2 cups (100g) of anchovies.
- 120g of green chili peppers.
- 1 tablespoon of vegetable oil (for chili peppers).
- 2 tablespoons of water.
- Anchovy fish sauce, 0.5 tablespoon.
- 2 cloves of garlic, minced.
- 2 tablespoons of mirim.
- 1 tablespoon of plum syrup.
- 1 tablespoon of sugar.
- 1 tablespoon of sesame oil.
- 1 tablespoon of black sesame seeds.
Instructions
Slice the shishito peppers diagonally and cut them in half.
Finely chop the garlic.
First, remove any solids from the anchovies by straining them through a sieve. Then, dry-roast the anchovies in a pan over medium-low heat for about 3 minutes to reduce any fishy smell, and let them cool.
Heat one tablespoon of cooking oil in a pan over medium heat. Add only the green chili peppers and stir-fry for 2 minutes.
Add 2 tablespoons of water, 0.5 tablespoon of anchovy fish sauce, minced garlic, 2 tablespoons of mirin (sweet rice wine), and 1 tablespoon of plum syrup. Simmer for 1 minute and 30 seconds.
Add the pre-fried anchovies and stir-fry over low heat for 2 minutes.
Add one spoonful of sugar and gently stir it in, then turn on the heat.
Finally, drizzle with 1 tablespoon of sesame oil and sprinkle with black sesame seeds before serving.
