Aged Kimchi Noodles with Spicy Sauce (Bibim Guksu).
Bibim Guksu (Spicy Noodle Salad)Ingredients
- Aged kimchi, 150g.
- 7 perilla leaves.
- 120g of somyeon noodles.
- 1/2 teaspoon of powdered sugar.
- 0.5 teaspoons of minced garlic.
- 2 tablespoons of soy sauce.
- 1 tablespoon of toasted sesame powder.
- 1 tablespoon of perilla oil.
- 0.5 teaspoon of sea salt (for cooking the noodles).
- A small amount of black sesame seeds.
Instructions
To prepare aged kimchi (mukeunji), soak it in cold water for 30 minutes to remove any strong odors, then tear it into long strips by hand.
Finely chop the perilla leaves with a knife and set aside.
Prepare the marinade by mixing together the ingredients (gochujang, garlic, soy sauce, sesame powder, and perilla oil).
Bring water to a boil and add some sea salt. Then, cook the somyeon noodles (cooking time: 3 minutes 40 seconds for one serving, 4 minutes for 2-3 servings).
When the water comes to a boil, add cold water twice, dividing it into two portions, to make the noodles firm and bouncy.
Rinse the cooked noodles thoroughly in cold water to completely remove the starch.
Coat the noodles with the sauce, and serve the remaining sauce alongside aged kimchi and slices of Korean radish on a plate.
Garnish with perilla leaves and finely ground sesame seeds.
