Spam Gochujang Stir-fry (A Rice Thief!)

- Spam, 200g (1 can).
- 4 green chili peppers.
- 1 red chili pepper.
- 1/3 of a zucchini squash (or 1/2 of an onion).
- 2 shiitake mushrooms.
- 1 cup chopped green onions.
- 4 tablespoons of soy sauce.
- 2 tablespoons of gochujang.
- 1/2 tablespoon of doenjang (Korean fermented soybean paste).
- 1 tablespoon of gochugaru (Korean chili powder).
- 1 tablespoon of sugar.
- 2 tablespoons of seasoned sauce.
- 1 tablespoon of minced garlic.
- 1 tablespoon of black sesame seeds.
- 1 tablespoon of sesame oil.
Instructions
First, wipe the spam with a paper towel to remove excess oil, then cut it into small cubes about the size of your fingernail.
Chop or slice the green peppers, zucchini, shiitake mushrooms, and green onions into small pieces, similar in size to Spam.
Heat a dry skillet over medium heat and add the spam. Cook until it's nicely browned and releases its oil.
Sauté the zucchini and shiitake mushrooms for about 2 minutes until they soften.
Turn off the heat and add soy sauce, gochujang (Korean chili paste), doenjang (fermented soybean paste), gochugaru (Korean chili powder), sugar, and mirin (sweet cooking wine). Mix well.
Turn the heat back to medium-high and stir-fry for one minute to remove the raw smell from the seasonings.
Reduce the heat to low, then add the chopped green onions, green chili peppers, red chili peppers, and minced garlic. Continue to stir-fry for another 2 minutes.
After extinguishing the flame, add toasted sesame seeds and sesame oil and stir in the Korean radish.
