Spicy Stir-fried Anchovies.
Stir-frying⏱ 15min👥 4 servings
Ingredients
- Ingredients: Anchovies (a moderate amount).
- Jin-ganjang (진간장) - This refers to a type of Korean soy sauce. It's typically a darker, saltier, and more concentrated version of regular soy sauce, often used as a seasoning or dipping sauce.
- Delicious liquor.
- Cooking oil.
- Gochugaru.
- Minced garlic.
- One teaspoon of honey or oligosaccharide syrup.
Instructions
1
Heat a pan without adding any oil, and stir-fry the anchovies until they start to sizzle, which helps remove any fishy smell and excess moisture.
2
Strain the fried anchovies through a sieve to remove any crumbs.
3
In a separate pan, combine the Jin-ganjang sauce, cooking wine, vegetable oil, gochugaru (Korean chili powder), and minced garlic, and bring to a boil.
4
Once the sauce starts simmering and the chili peppers are cooked through, turn off the heat.
5
Add the pre-fried anchovies (that have been cooked and cooled) to the stir-fry with the Korean radish.
6
Finally, add one tablespoon of honey (or oligosaccharide) and stir well.
