Delicious Doenjang (All-Purpose Beef Doenjang).
Fermentation & PicklingIngredients
- 400g of ground beef (chuck is recommended).
- Traditional Doenjang, 500g.
- 3 tablespoons of sesame oil.
- 1/2 cup tuna extract (yellow).
- 4 tablespoons of minced garlic.
- 1/2 cup of "matsul" (Mirim or Mihyang).
- 1/2 tablespoon of minced ginger (or a little less).
- 2 tablespoons of sugar.
Instructions
Heat 3 tablespoons of sesame oil in a pan. Once the oil is hot, add the ground beef and stir-fry thoroughly to remove any unwanted odors.
Once the beef is cooked, add 500g of doenjang (Korean fermented soybean paste) and stir-fry it briefly to transform the slightly bitter taste of the doenjang into a savory flavor.
Add 1/2 cup of yellow fish sauce and 4 tablespoons of minced garlic, and mix well.
Reduce the heat to low, then add 1/2 cup of mirin (Korean sweet cooking wine) to remove any lingering odors and enhance the subtle sweetness.
Adding minced ginger effectively neutralizes the bitterness and distinctive odor of doenjang. (This is the most important step.)
Add 2 tablespoons of sugar to balance the acidity and enhance the umami flavor.
Once the marinade is prepared, allow it to cool completely before transferring it to an airtight container and storing it in the refrigerator.
