Stir-fried Enoki mushrooms.

- 1 package (approximately 250g) of enoki mushrooms.
- 1/4 of an onion.
- A small amount of carrots.
- A small amount of green onions.
- 1 green chili pepper (cheongyang gochu) or red chili pepper.
- 2 tablespoons of cooking oil.
- 1/2 tablespoon minced garlic.
- 1 tablespoon of soy sauce.
- 1/2 tablespoon of oyster sauce (optional).
- 1/2 teaspoon of oligosaccharide.
- 1 tablespoon of sesame oil.
- A small amount of black sesame seeds.
- A pinch of pepper.
Instructions
To prepare the enoki mushrooms, trim off the base and separate them into individual strands. For thicker strands, tear them in half by hand.
Slice the onions and carrots thinly. Chop the green onions and chili peppers diagonally.
Place the mushrooms in a dry pan and sauté over medium heat until they release their moisture.
Once some of the moisture has evaporated, add 2 tablespoons of vegetable oil and minced garlic, and stir-fry to release their aroma.
Add the onions and carrots, then quickly stir-fry them over high heat, pushing the ingredients to one side of the pan.
Pour soy sauce into the pan and let it simmer slightly. Then, mix it with the ingredients to infuse them with flavor.
Add oyster sauce and oligosaccharide to enhance the umami flavor, then add chili peppers and green onions.
After extinguishing the fire, sprinkle with sesame oil, black sesame seeds, and pepper, then serve with Korean radish.
