Ingredients
- One grapefruit.
- Use a moderate amount of sugar.
- Ice (for maintaining freshness and for stabilization).

- 1. Carefully slice the grapefruit horizontally, ensuring that you don't remove too much of the flesh from the top and bottom.
- 2. Using a knife, carefully peel the grapefruit, following its curve to ensure that no white pith remains on the fruit.
- 3. Carefully make incisions between the segments of the fruit and gently remove only the fleshy pulp, a process called "segmenting."
- 4. Using a spoon, scoop out the flesh from the remaining grapefruits to create empty grapefruit "shells."
- 5. Carefully fill the grapefruit peel "bowl" with the grapefruit pulp and segmented pieces, arranging them attractively.
- 6. Sprinkle sugar evenly over the surface of the grapefruit.
- 7. Use a torch to caramelize the sugar until it turns brown and hardens (brûlée).
- 8. Once the sugar layer has solidified and become crispy, serve immediately.
