Aged Kimchi Pancake with Tofu.

- 1/4 portion of aged kimchi (mukeunji).
- Tofu, 340g (1 package).
- 150g of ground pork.
- 0.5 teaspoon of sugar (for marinating).
- 1 tablespoon minced garlic (for marinating).
- 1/2 onion.
- 2 green chili peppers.
- 1 green onion stalk.
- 1 handful of shiitake mushrooms.
- 2 tablespoons of gochugaru (Korean chili powder).
- 1 teaspoon of salted shrimp.
- Guk-ganjang (soup soy sauce): 0.5 teaspoon.
- 1 tablespoon of perilla oil.
- 500-600 ml of anchovy broth.
- 1 tablespoon of cooking oil.
Instructions
To remove any unwanted fishy odor from aged kimchi, soak it in cold water for 30 minutes. After draining the water, cut the kimchi into bite-sized pieces.
In a bowl, combine the sliced aged kimchi with 0.5 teaspoons of sugar and 1 teaspoon of minced garlic. Mix well and let it marinate for 20 minutes.
In a pan, heat 1 tablespoon of cooking oil over medium heat. Add the ground pork and stir-fry. Then, add 1 tablespoon of mirin (Japanese sweet rice wine).
Once the pork is cooked through, add the aged kimchi and stir-fry together for about 3 minutes.
Reduce the heat to low, then add 2 tablespoons of gochugaru (Korean chili powder) and 1 tablespoon of salted shrimp. Next, layer on the ingredients in the following order: onion, tofu, enoki mushrooms, green chilies, and green onions.
Pour in the anchovy broth and bring it to a boil over high heat. Then, season with 0.5 tablespoons of *guk-ganjang* (soup soy sauce), cover, and simmer for 5 minutes.
Finally, drizzle one tablespoon of perilla oil over the Korean radish.
