Chives and soybean flour steamed dish.

Ingredients
- 200g of chives (about a handful).
- 200ml of finely ground soybean powder (approximately 80g).
- 2 tablespoons of peanut flour (coarsely ground).
- A pinch of salt (three pinches).
- 1 tablespoon of perilla oil.
Instructions

Wash the chives thoroughly and leave them slightly damp. Then, slice them into pieces about 5 cm long.

In a mixing bowl, combine the chopped green onions with 1 cup of raw bean powder and mix thoroughly. (Do not add any salt at this stage.)

Line a steamer with cheesecloth, and once it's steaming, add scallions coated in soybean powder.

Cover the surface with a damp cloth, close the lid, and steam over medium-high heat for exactly 4 minutes.

Spread the blanched scallions on a tray and let them cool for about a minute. Then, gently shake off any excess water from the clumps.

Add 2 tablespoons of peanut flour and a pinch of salt, then mix well again.

Finally, add one tablespoon of perilla oil and mix well.
