Winter Solstice Red Bean Porridge.

- 300g of adzuki beans.
- Sweet rice flour.
- Small amount of glutinous rice flour (compared to sweet rice flour).
- 1 teaspoon of salt.
- Water (plenty).
- Honey (optional).
Instructions
Rinse the adzuki beans thoroughly, then boil them in a large pot of water over high heat for 5 minutes. After boiling, discard the initial cooking water.
Add plenty of water again and simmer over medium-low heat for 30-40 minutes, stirring occasionally with a spoon until the ingredients are well combined.
Combine glutinous rice flour and regular rice flour with salt, then gradually add boiling water while kneading to form a smooth dough. Shape the dough into small, round balls called "saealshim."
Strain the cooked red beans through a sieve to remove the skins, separating the bean paste (an) from the liquid.
Add the glutinous rice that has been soaked in adzuki bean water and cook over low to medium heat until it becomes soft and pulpy.
Add the sweet red bean paste and stir while simmering. Once it starts to boil, add the rice balls.
Once the rice balls float to the surface, season with salt and add honey according to your preference.
