Japchae PrincipleIngredients
- Glass noodles (amount not specified, cooking time: 8 minutes).
- 200g pork loin (cut into long, thin strips).
- 200g of spinach.
- 4 shiitake mushrooms.
- 2 onions.
- 1 carrot.
- 2 bell peppers.
- 2 tablespoons of minced garlic (use in portions).
- Soy sauce (3 tablespoons + 3 tablespoons + 1 tablespoon).
- Sugar (1 tablespoon + 1 teaspoon).
- Sesame oil (2 tablespoons + 2 tablespoons + 1 tablespoon + 1 teaspoon).
- 1 tablespoon of "Matsu" liquor.
- Salt (1 teaspoon for blanching + for seasoning).
- Black pepper seasoning.
- Cooking oil.
Instructions
Marinate the sliced shiitake mushrooms and pork with 1 tablespoon of soy sauce, 1 teaspoon of sugar, 1 teaspoon of sesame oil, 0.5 tablespoons of minced garlic, 1 tablespoon of mirin (sweet cooking wine), and a pinch of pepper. Let it marinate for a while.
Bring a pot of water to a boil and add 1 teaspoon of salt. Blanch the spinach for 30 seconds, then immediately transfer it to ice water for 10 minutes. Drain the spinach thoroughly. In a bowl, combine 0.3 teaspoons of salt and 1 teaspoon of sesame oil, and toss with the blanched spinach to create Korean-style seasoned spinach chips.
Dice the carrots, onions, and bell peppers.
Heat some cooking oil in a pan. Add finely chopped carrots, onions, and bell peppers separately, along with a little minced garlic and salt to each. Sauté them individually and then spread them out on a plate to cool.
First, sauté the mushrooms in 2 tablespoons of water and a pinch of salt. Separately, pan-fry the marinated meat and set it aside.
Add the glass noodles to boiling water and cook for 8 minutes. Then, drain them in a sieve and let them cool for 3 minutes (do not rinse with cold water).
First, in a pot of boiling water, add 3 tablespoons of soy sauce, 1 tablespoon of sugar, and 2 tablespoons of sesame oil. Then, add the Korean radish.
Add all the prepared vegetables, meat, and mushrooms, then add an additional 3 tablespoons of soy sauce and 2 tablespoons of sesame oil. Mix everything thoroughly until well combined, and it's ready.
