Soybeans in soy sauce (braised soybeans).
Braised Black Soybeans⏱ 25min👥 4 servings
Ingredients
- 2 cups (300g) of white kidney beans.
- 800 ml of water.
- Kelp (Dasima), 1 sheet (15g).
- A small amount of cooking oil.
- 3 tablespoons of soy sauce.
- 1 tablespoon of soup soy sauce (guk-ganjang).
- 3 tablespoons of blackstrap molasses.
- 1 tablespoon of sesame oil.

Rinse the beans quickly in cold water and thoroughly remove all excess moisture.

In a dry pan, add the beans and stir-fry them until they release their nutty aroma.

Cool the roasted soybeans for 3 minutes.

In a pot, combine the beans, vegetable oil, kelp (dashima), and 800ml of water, and bring to a boil.

Once it comes to a boil, skim off any foam or impurities, remove the kelp (dashima), and continue simmering for another 10 minutes.

Add soy sauce (3 tablespoons), soup soy sauce (1 tablespoon), and black sugar. Heat over high heat and simmer.

Once the sauce has reduced and thickened, add sesame oil at the end and stir well.
