Here's a super simple all-purpose sauce that can be used in 30 different dishes.

Ingredients
- 80g of chives (a handful).
- Onion, 65g (half of a small onion).
- 3 green chili peppers (Cheongyang chili peppers).
- 1 red chili pepper.
- 5 cloves of garlic.
- 100g of Jin-ganjang (slightly more than half a paper cup).
- Purified water, 1/4 cup (measured in a paper cup).
- 2 tablespoons of gochugaru (Korean chili powder).
- 1 tablespoon of sugar.
- 2 tablespoons of sesame oil.
- 2 tablespoons of black sesame seeds.

Finely chop the chives, cutting them into pieces about 4-5 mm in size.

Finely chop the onion and set it aside.

Finely chop the green chili peppers and red chili peppers after making a cross-shaped slit in them and removing the tough seeds.

Crush the garlic gently with the flat side of a knife, then finely chop it.

In a bowl, combine the appropriate amount of doenjang (fermented soybean paste), water, gochugaru (Korean chili powder), sugar, sesame oil, and sesame seeds, and mix well.

Add all the prepared vegetables (chives, onion, chili peppers, and garlic) and mix thoroughly until well combined.
